We begin with only the finest fresh fish responsibility sourced from the pristine waters of Canada. Delivered fresh every Monday, these premium fish are hand-selected for their exceptional quality and flavour.

Our journey continues at our Mississauga processing facility, where every fish is carefully cleaned and expertly prepared for marination.

Each fillet is cured in our exclusive, family spice blend recipes, meticulously developed to create the authentic, complex flavours that set our
smoked fish apart.

The magic happens in our traditional smoker, where the fish is cold-smoked for 20 days using all-natural maple woodchips. This patient process infuses each piece with a rich, distinct flavour that embodies the essence of artisan craftsmanship.

Once smoked to perfection, our fish is delicately pre-sliced, ensuring every slice is ready to enjoy.

Finally, each fillet is vacuum-sealed with care to lock in freshness.
